Recommend a butchering set or trimming knife
So been watching The Bearded Butchers on Youtube which reminded me of the frustration I usually have when it comes time to butchering/trimming my whole cuts. These guys appear to use a shorter stouter type filet knife for the most of their work.

Anyone have any recommendations on a trimming knife or knife set that they use?

I use Havalon Piranta to skin deer and trim deboned cuts.

Victorinox fibrox. Very good for the price. I’ve got nicer knives for the wife, but I grab these when I’m deboning and trimming. Amazon has a few different sizes and styles.

Cold Steel commercial series, pick out the one you want as they don't make a set in the commercial line.

How much are you wanting to spend?

Are you talking about a caping knife?

I want a diamond blade summit or surge but that may be more than you want to spend

My buddy that owns a deer processing shop recommended Victorinox to me. He uses a 6" boning knife.

I like dexter filet knives for deboning and trimming. Use my Bench Made for skinning.

Can't go wrong with Forschner/Victorinox (Swis Army knife folks) 6" boning knives. That is what we use in our meat processing facility. #40515 this is the semi stiff blade; don't get the flex blade unless you want a great fish fillet knife.

They have a video where they recommend the Victorinox 6" boning knife and show how they sharpen it.
